A spouse is never listed on the dependent line of your return. You will include the spouse on the heading of the return even if you elect to file MFS and lose part of your standard deduction. If your spouse has -0- gross income you can include the exemption amount(3100) with your own and any dependent's amount.
I do, however, encourage you to consider filing a joint return unless there are specific reasons you wish to file seperately.
